Eggnog is a delicious creamy drink traditionally drunk during the Holidays. You can always buy eggnog but the commercial ones do not have the same great taste that homemade recipes have. Presenting five easy ways to make eggnog and some of these recipes are suitable for Vegans as well!
1. Easy eggnog (non alcoholic)
Many people wish to enjoy eggnog without the added calories. This delicious recipe contains 240 calories only and is not as rich as the commercial preparations which have 50% more calories and twice as much fat.
- Whole milk ½ gallon
- Eggs 3 beaten
- Sugar ¾ cup
- Non-fat dry milk 1/3 rd cup
- Gelatin 1 packet
- Cinnamon and nutmeg ½ tsp each
- Rum flavoring and vanilla flavoring ½ tsp each
Method: Mix beaten eggs, flavorings and 4 cups of milk. Stir the mixture well and set aside. In a bowl, add the non-fat dry milk, sugar, spices and whisk thoroughly. Mix the wet and dry ingredients.Add the remaining milk. In a double broiler, heat the mixture at no more than 165 F and hold the temperature for at least 30 seconds. Keep stirring with a wire whisk during and after heating. Cool immediately in the refrigerator.This is a great non alcoholic eggnog for kids.
2. Low calorie eggnog
Simply by replacing whole milk in above recipe with skim milk and sugar with sugar substitutes you can skim off hundreds of calories in this low calorie eggnog version.
- 2% skim milk ½ gallon
- 1 egg
- 16 packets of sweetener of 1 gram each
- 1/3 cup nonfat dry milk
- 3 tsp Gelatin
- Cinnamon and nutmeg powders ½ tsp each
- Vanilla and rum flavorings ½ tsp each
The preparation of this low calorie recipe is exactly the same as above. Follow the steps.
3. Guilt-free Vegan eggnog recipe
This is a quick and easy and surprisingly delicious recipe of eggnog which has the same taste as traditional eggnog. The best part is that it contains only 199 calories. Add a shot of brandy and bump up the calories to 255.
- Coconut milk 1 can
- Water 1 ½ cups
- 1 small package of Vanilla instant mix pudding (you can use the sugar free variety)
- 2 tbsp Agave nectar
- 1 tbsp Vanilla extract
- Nutmeg and Cinnamon 1 tsp each
- Rum extract 1 tsp
Put all ingredients in a blender and enjoy.
4. Non alcoholic eggnog recipe for kids
Make this creamy and delicious eggnog recipe for kids and with kids!
- 3 cups whole milk
- 1 cup heavy cream
- ½ cup sugar
- 4 large eggs
- 2 tsp vanilla extract
- Freshly grated nutmeg
In a saucepan, mix milk, cream, sugar, eggs and cook over low heat stirring constantly. The mixture should thicken slightly and coat the back of the spoon.Do not let it boil. Remove from heat and add vanilla extract. Add whipped cream and grated nutmeg on top. You may chill the drink before serving. If it thickens, just add some more milk.
5. Delicious eggnog without cream and eggs
What is eggnog without cream and eggs, you ask? This one is a delicious tofu based recipe which everyone will love. It has 235 calories.
- 2 packets silken tofu
- 16 oz Vanilla soy milk/almond milk/rice milk
- 1 tbsp + 1 tsp Vanilla extract
- ¼ cup sugar
- 2 tbsp brown sugar
- Turmeric ¼ tsp
- ½ to 1 cup rum or brandy (optional)
- Nutmeg to taste
Add all ingredients in a blender except nutmeg. Blend well, stopping every now and then to scrape down the sides. Chill and serve dusted with grated nutmeg.
