Poke an egg with a small sewing needle before hard boiling, The egg will peel much better. To help shell the eggs, dip your fingers in a little butter to prevent the fragments of shell sticking to your fingers.

I find the best way to peel boiled eggs is, when the eggs are done put a tray of ice cubes in with the drained eggs and fill with cold water to cover eggs, peel when cooled.
